    I recently had the pleasure of cooking with the Heritage Pork Belly and it was, for the most part, a delightful experience. The quality of the meat was immediately noticeable; it had a beautiful marbling and a fresh, rich smell that you’d expect from premium pork.

    I decided to slow roast the pork belly to really draw out its natural flavours and the result was truly impressive. The meat was tender and succulent, and it had a deep, robust flavour that the word “heritage” truly lives up to. It melted in the mouth in a way that lesser pork bellies simply can’t manage.

    I paired it with a light, tangy apple sauce and a side of roasted root vegetables, and the contrast was perfect. The pork belly was rich and indulgent, while the apple sauce provided a hint of sharpness to cut through the fats. The combination was a hit with my family, and I would absolutely use this product for a special occasion or a weekend treat.

    However, I did find the skin a tad difficult to get crispy. Despite scoring and rubbing in salt as usual, it didn’t quite achieve the level of crunch I was hoping for. This could be due to a number of factors, but it was a slight point of frustration.
